Ingredients:
4 servings:
600 g of Watermelon (without skin)
540 g of Salad tomato
60 g of Cucumber
70 ml Extra virgin olive oil
80 ml Vinegar
80 g of Iberian Ham
A pinch of salt
Preparation:
Peel, and cut into small pieces the watermelon, tomatoes and cucumber.
With the help of a blender, or a food processor, grind all the vegetables until we get a smooth paste (like a thick broth).
Add the salt, the extra virgin olive oil and the vinegar. Depending on desired flavour, the proposed amounts of these ingredients can be increased or decreased.
Grind again to mix the oil and vinegar homogeneously
Strain to leave fine.
Cool in the fridge.
Slicing the Iberian ham in small very thin slices (shavings)
Serve the gazpacho in soup bowls, with the Iberian ham shavings aside, so that everyone can add them to their own taste.
